Sweet brown rice is a soft, sticky brown rice that is sometimes called sushi rice because its texture lends itself well to sushi rolls. Although it is considered a glutinous rice because of the sticky texture, it does not contain dietary gluten and is safe for those following a gluten-free diet. Sweet brown rice has a nutty, slightly sweet flavor that also makes it ideal for desserts such as rice pudding.

- For a nuttier flavor, toast the rice first by putting it in the pan alone over medium heat, stirring frequently, for 2-3 minutes before adding the water and butter.
