The fairytale pumpkin is an heirloom French variety called “Musquee de Provence,” and gets its nickname from its fanciful appearance. Somewhat flat and deeply ribbed, this richly-colored squash looks exactly like those depicted in the fairy tales you remember from childhood. It’s easy to imagine a fairy godmother transforming one of these pumpkins into a magical coach. Although often purchased purely for its ornamental value, this vegetable is also a versatile kitchen performer. Like all squash, the fairytale pumpkin is highly nutritious, low in calories and rich in fiber and antioxidants. You can serve roasted pumpkin slices as a side dish, or use the cooked squash in soups, stews and desserts. The fairytale pumpkin is a winter squash, meaning that its hard, thick rind is not edible.
Baked Squash
Preheat the oven to 375 degrees Fahrenheit.
Use a sharp knife to cut the fairytale pumpkin into slices, using the ribs as a cutting guide.
Scoop out the pulp and seeds from each slice.
Place the slices in a baking dish and bake for about 30 minutes, or until the flesh yields to a fork.
Boiled Squash
Cut the fairytale pumpkin into slices, using the ribs as a cutting guide.
Remove the pulp and seeds.
Place the slices in a saucepan and cover with water.
Bring to a boil in large sauce pan and cook until the squash is soft and yields to a fork.
Remove the slices from the water and allow them to cool.
Cut away the rind from each slice and discard.
Puree or mash the squash as needed for your recipe.

Roasted Squash
Preheat the oven to 400 degrees Fahrenheit.
Cut the fairytale squash into slices, using the ribs as a cutting guide.
Remove the pulp and seeds.
Place the slices on a rimmed baking sheet.
Drizzle melted butter or oil over the slices if desired; season with salt and pepper. You can also add flavor by coating each squash piece with brown sugar, honey or maple syrup.
Roast the slices for 40 to 45 minutes, flipping them over halfway through the cooking time.
Remove the slices from the oven when the rind becomes blistered and brown and the flesh is soft and tender.
Microwaved Squash
Cut the fairytale squash into slices, using the ribs as a cutting guide.
Remove the pulp and seeds.
Place the squash slices in a single layer in a baking dish.
Cover the dish loosely with plastic wrap.
Microwave the squash at full power, allowing about 7 minutes per pound. The cooking time will vary depending on the size of the squash.
