
Buttercup squash is one of a variety of winter squashes, and they grow to about 5 lbs. in size. Even though they are winter squash, you should be able to find them available all year around. f you purchase these squash in a store, you will likely only be able to purchase a section of squash. There are many methods of cooking a buttercup squash, but the most common method is baking.

Preheat an oven to 375 degrees F.

Peel the squash with a vegetable peeler or sharp knife. Take care, as the outer shell can be difficult to peel.

Cut the squash in half lengthwise and clear the center of seeds and pulp with a large spoon.

Pour a small amount of water in a deep baking dish and lay the squash in the pan cut side down.

Bake for approximately 30 to 45 minutes, or until a fork slides in and out easily.

Remove from the oven and sprinkle with brown sugar and butter mixture, and season with salt and pepper to taste.
