Scrambled eggs can be made in a variety of ways with many different ingredients. Adding spinach to your breakfast eggs is a good way to get more iron in your diet. It also adds a little kick to otherwise plain eggs.
Chop up 2 cups of spinach into small pieces.
Coat a medium non-stick skillet or frying pan with butter flavored cooking spray. Turn your stove burner to medium or medium-low heat.
Crack eggs into a mixing bowl. Add milk if desired for a creamier recipe. Add a bit of salt and pepper to taste. Add in chopped spinach and whisk together until smooth and frothy.
Pour contents into pre-heated skillet. Turn over and cook eggs with a rubber spatula until firm and the eggs do not look runny. Sprinkle with oregano if desired.
