Breakfast is said to be the most important meal of the day. Eating foods high in protein such as eggs gives you energy to last the day. Scrambled eggs can be made in a variety of ways with many different ingredients. Adding spinach to your breakfast eggs is a good way to get more iron in your diet. It also adds a little kick to otherwise plain eggs.
Chop up 2 cups of spinach into small pieces.
Coat a medium non-stick skillet or frying pan with butter flavored cooking spray. Turn your stove burner to medium or medium-low heat.
Crack eggs into a mixing bowl. Add milk if desired for a creamier recipe. Add a bit of salt and pepper to taste. Add in chopped spinach and whisk together until smooth and frothy.
Pour contents into pre-heated skillet. Turn over and cook eggs with a rubber spatula until firm and the eggs do not look runny. Sprinkle with oregano if desired.
