Items you will need
4 chicken breasts
1/2 cup lemon juice (fresh is best)
1 1/2 cups water
1/2 cup olive oil
1/2 tsp. dried oregano
1 tsp. garlic powder
1/2 tsp. Rosemary
Salt and pepper to taste
Lemon Chicken is one of those versatile dishes that can be made in many ways. This baked version produces a tangy taste. The key is to marinate the chicken with the lemon juice mix for at least a day.
Preheat the oven to 450 degrees Fahrenheit.
Combine the lemon juice, olive oil, oregano, garlic powder, Rosemary and 1 1/2 cups of water.
Taste the marinade. Add salt and pepper if needed.
Add the chicken and mix well. Let this sit for at least 24 hours, if not longer, so the lemon is fully absorbed by the chicken.
Place the chicken in a baking pan. Cover it with foil and bake at 450 degrees Fahrenheit for 45 minutes.
Turn off the heat. Open the foil and let the chicken cook 10 minutes longer in the warm oven. This works better if the skin has been removed from the chicken.
For crisp chicken, move the cooked chicken to another baking dish without the marinade and foil. Bake it for 10 more minutes at 550 degrees Fahrenheit.
