Preheat oven to 350 degrees. Grease and flour your cake pans.
Beat sugar and softened butter until fluffy. This will take a few minutes. Add the eggs and vanilla, then beat with mixture until fully incorporated.
Add the flours, baking powder, baking soda, and xanthan gum. Mix at a low speed to combine the ingredients. Add the milk, and mix with a mixer for 2 minutes on low to medium speed.
Using a large spoon, divide the cake batter between the two cake pans. Bake the cakes for around 35 minutes, or until springy. Cool thoroughly, then remove from pans and frost with your favorite gluten free frosting recipe.
