How to Make Nigerian Pepper Soup

by Contributor ; Updated September 28, 2017

Pepper soup is a Nigerian delicacy made entirely of meat broth. It is commonly made with goat meat, but chicken, fish and turkey are acceptable ingredients. It's like traditional American soup except it is very spicy. It is usually served with rice.

Cut the meat into small pieces and place them in the pot.

Add the onion, salt and 1 cup of water. Bring the water to a boil and cook the meat until it's tender.

Take the meat out of the pot and reserve the water in a bowl. Dilute the tomato paste in the water.

Heat the oil in the pot. Return the meat to the pot, and add the pepper, the diluted tomato paste, and other ingredients. Stir in the crayfish and any other optional ingredients.

Cover the pot and let it simmer on low heat for 10 minutes.
