Make your own dehydrated mango slices for snacks or recipes in a food dehydrator. Sun-drying takes days, and in some humid locations, where conditions are right for growing mangoes, the humidity is too high to safely dry the them outside with the sun. These appliances control the temperature and humidity of the drying chamber, producing perfectly dried mango slices in any climate.
Hold the mango upright on a cutting board with the stem facing up.
Cut the two broad, flat sides off the mango, following the contours of the pit inside the mango with the knife.
Slice the two remaining portions from the edges of the pit.
Cut the mango into 1/4 inch slices, and cut the peel from each slice.
Dip the sliced mango in the lemon juice to keep them from browning.
Shake the excess lemon juice off the slices and arrange the mango in a single layer on the food dehydrator trays.
Dry the mango slices until they become leathery, but pliable.
Cool the mango slices completely and package in an airtight container for storing in the pantry or freezer.
