Chicken tenderloin is boneless, skinless and nutrient rich. Store it in the freezer and thaw it quickly when it is necessary to prepare nutritious and tasty meals fast. Chicken tenderloin is a tender moist muscle of the breast that responds well to marination and dry seasonings. It is less likely to taste dry and stringy when cooked under moist conditions. This includes cooking with sauce, gravies or as the primary ingredient in a casserole.
“Hurry Up” Chicken and Dumplings
When a comfort food dinner sounds good, make a pot of chicken and dumplings. Place the desired amount of canned chicken broth into a pot and bring it to a boil. Mix one part flour to one part water, whisk it until it is very smooth and pour it slowly into the boiling water, stirring continuously. When it is the thickness of heavy cream cut retail refrigerated biscuits into quarters and drop them slowly into the boiling chicken gravy. Stir the biscuit quarters into the gravy and add hot, micro-waved chicken tenderloins to the pot. Season with sage, thyme, poultry seasoning, salt and pepper.
Chicken quesadillas make a fast, delicious and different dinner for the family. The quesadillas are very quick to prepare, leaving plenty of time to make a guacamole salad and break out the chips and salsa. Place a flour tortilla on the cutting board, spread it with a layer of refried beans and sprinkle shredded cheese over the top of the refried beans. Shred cooked chicken tenderloins and layer them over the cheese. Place another layer of shredded cheese on the chicken and top it with another flour tortilla. Place the quesadilla into a hot skillet. Brown the bottom tortilla and flip it over to brown the other tortilla. The melted cheese melds the quesadilla together; cut it into four wedges and serve hot.
Fried Chicken Tenders
Double-breaded fried chicken tenders are the basis of a satisfying meal when served with mashed potatoes, gravy and black-eyed peas with snaps and cornbread. Dredge the raw tenderloins through a mixture of flour, salt and pepper and dip them into a solution of well-beaten milk and egg. Dredge them again through the flour mixture then slip them into a skillet of vegetable oil preheated to a simmer. Cook them until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
Green Chili Cheese Enchilada Casserole
Green chili cheese enchilada casserole is a Spanish favorite from New Mexico to California. It is a heavy, rich one-dish meal. Cut corn tortillas into eight pieces like a pizza. Dip the tortillas into hot oil just long enough for them to become limp and set them aside. Place a layer of tortilla wedges on the bottom of the baking dish and sprinkle a generous layer of shredded cheese on top of the tortillas. Place a layer of shredded cooked chicken tenders on top of the cheese and cover the chicken liberally with green chili sauce. Repeat the layering process and finish off the casserole with a layer of shredded cheese. Bake until it reaches an internal temperature of 145 degrees Fahrenheit.
Asian One-Course Meal
Asian dishes provide a nutritious change of pace for families who are not accustomed to them. Some Asian dishes are one-course meals full of protein and vegetables. Chicken tenderloins absorb the seasonings and blend in well with the vegetables. Prepare a simple and delicious Asian dinner by sauteing sliced chicken tenderloins in olive oil until done, then simmer them for 10 to 15 minutes in chicken broth. Add celery, onions, carrots, water chestnuts and broccoli; season at the same time with minced garlic, ginger, sage, soy sauce, salt and pepper to taste. Thicken the sauce by blending equal parts cornstarch and water and stirring the solution into the sauce until it reaches the desired thickness.
