Turkey is a healthier kind of meat because it contains less saturated fat and cholesterol than red meat. Using a turkey breast in your barbecue sandwich reduces both the caloric and fat content of your sandwich. To make a simple pulled turkey, place about 1 lb. of turkey breast in your crockpot. Top it with garlic, onion powder, olive oil, pepper and your favorite barbecue sauce. Try to select a low-sodium sauce. Cook all day in your crock; shred meat with a fork. Place the meat on a whole-wheat hamburger bun and enjoy a low-fat and low-calorie homemade pulled turkey sandwich for dinner.
Vegetables are inherently low in fat and calories. For a hearty and healthy meal to come home to, try a warm vegetable stew. EatingWell.com suggests making a veggie stew with eggplant and chickpeas. To make this dish, combine roasted eggplant, chickpeas, olive oil, onions, garlic, cinnamon stick, salt, mushrooms, black pepper, a bay leaf and tomatoes in your crockpot. Cook for about four hours and you have a delicious stew. This dish works well served over brown rice or even polenta, a mushy cornbread or barley.
Stuffed peppers are always a hearty meal, but are usually not a good choice for a low-fat and low-calorie plan because beef is included. However, substituting beef with tofu cuts fat and calories. To prepare a crockpot stuffed pepper, simply cut the top off a pepper and empty out the seeds. Stuff the inside with a mixture of tofu, pepper, salt, onion powder, egg white, garlic, tomatoes, cooked brown rice and some low-fat cheese. Place in your crock and enjoy just a few hours later.
A chicken taco is an easy way to please you and your family's taste buds without eating too much fat or calories. Shredded chicken, spiced just the right way, is easy to make in your crockpot and makes a delicious stuffing for tacos. Choose a lean cut of chicken, like a boneless breast, and place it in your crock. Add some water, chili powder, cumin, jalapenos, tomatoes, smoke sauce and olive oil. In about four hours, open your crockpot and use a fork to shred the chicken. Stuff chicken into a tortilla with some tomatoes, lettuce, low-fat sour cream and cheese.
