If you love pancakes, but are seeking a different twist on this breakfast standard, muffin mix is the answer. Muffin mixes come in a variety of tasty flavors -- fruit, chocolate chip, nut and cheesecake flavors. To spice up your traditional morning pancakes, simply swap out your pancake mix for a flavored muffin mix for your entire family to enjoy.
Use an easy-to-make muffin mix; one that requires you add only water or milk. Stir the muffin mix as directed until smooth.
Mix a half cup of flour and 1 tsp. of baking soda in with your muffin mix. Stir until well blended.
Mix 1 cup of water, an egg and 1 tsp. of vegetable oil into your mixture. Stir until ingredients are well blended.
Spray a frying pan with a non-stick cooking spray. Turn your stovetop burner to a medium heat setting.
Pour 1/4 of the muffin mix into the frying pan. Flip after two minutes. Fry until the pancake becomes dry around the edges and begins to bubble. Your pancakes should appear to be a golden brown color.
