Even when you check the eggs in the carton at the grocery store, you can still end up with a cracked egg or two by the time you reach home. Unless the egg is spilling out all over the carton, you can still use it--provided you take a few precautions and refrigerate the cracked eggs immediately.
Place the cracked eggs into a separate egg carton and refrigerate. Use the eggs within one day in a dish in which the eggs will be fully cooked.
Break the egg into a shallow container. Secure a tight-fitting lid on the egg and store in the refrigerator for up to 2 days. Use in a recipe in which the eggs will become fully cooked.
Crack the egg and separate the yolk from the white. Store each in separate shallow containers in the refrigerator and use within 2 days in recipes calling for either the yolk or the white.

Tips
- You can immediately crack the eggs, scramble them with a fork, and store the eggs for future use in the freezer in small containers. You can also freeze the whites separate from the yolks, if desired.
- If the cracked egg has been without refrigeration for more than two hours, throw it out. It can cause food poisoning.
