Burritos do not only have to be a lunch or dinner food. Here are some tips to help you make your own breakfast burritos:
In a frying pan, cook the bacon over medium heat. Make sure to cook both sides by flipping the bacon over. Turkey bacon may be used instead as a healthier alternative. You will need 2 slices of bacon per burrito. Multiply however many burritos you are making by two to determine how many slices of bacon you should cook. Place the cooked bacon in a paper towel lined microwavable dish to drain the excess fat. Set the plate of bacon aside.
Clean your frying pan with warm water and soap. In a medium-sized mixing bowl, whisk or beat the eggs until they are a buttery yellow color. Melt butter or spray the frying pan with cooking spray. Over medium heat, cook the scrambled eggs. Be sure to stir periodically to prevent burning or sticking. Add salt and pepper as desired and set the cooked eggs aside in a microwavable plate. You will need one egg per burrito.
Clean your skillet once again with warm water and soap. Fill the skillet half way with oil and warm it to a gentle boil over medium-high heat. Once the oil is boiling, soften the tortillas one at a time: set it in the oil for 10 seconds, flip it and let sit for another 10 seconds and then place the tortilla in a paper towel lined plate. Be careful not to overheat the tortillas or they will become crispy instead of soft.
In the microwave, heat the bacon for 30-45 seconds. Stir the shredded cheese into the eggs and microwave for 30-60 seconds.
Lay the tortillas flat and place to slices of bacon on each. Spoon equal amounts of the egg and cheese mixture onto each tortilla. You can either fold or roll your burrito … whatever works best for you.
You’re all finished. If you have leftovers, you can warm them in the microwave for 30-45 seconds. Also feel free to dress up your burrito however you like. You can use ham, pepperoni or salami instead of bacon. You can also substitute egg whites if you are on a diet.
