Grilled vegetables serve as an appropriate side dish for grilled meats and seafood. They can also be used in salads or eaten on their own as part of a light meal or snack. Grilled romaine lettuce has a short preparation and cook time and involves only a few simple ingredients, making it ideal for large cookouts and budget-conscious eaters. After it is grilled, romaine lettuce has a crunchy texture and a subtle charred flavor.

Heat the grill. Cut the romaine lettuce hearts in half lengthwise. Brush each half with olive oil and sprinkle salt and pepper on them according to your taste preferences.

Place the romaine lettuce halves with the cut sides face down one the heated grill. When the lettuce hearts begins to char, use a pair of tongs to gently flip them over. Apply 2 teaspoons of Parmesan cheese over the top of each piece and continue grilling.

Remove the lettuce from the grill once the leaves begin to wilt. Serve immediately while hot.

Tip

  • Try different seasonings for your grilled romaine lettuce. Use garlic powder, oregano, crushed red pepper, balsamic vinegar and other seasonings.

Grill additional vegetables with your romaine lettuce to create an entire grilled salad. Pair it with grilled zucchini, summer squash, tomatoes, onions and bell peppers.

Grilled vegetables make for a crunchy sandwich wrap. Fill a sliced pita with your vegetables and serve with a garlic cucumber yogurt sauce.
