Manufacturers typically label their bottles as sweetened lime juice in the U.S., but in other countries, the labels might say lime cordial. Regardless of the name, this lime syrup is a versatile ingredient you can make at home for both cocktails and nonalcoholic drinks.
Using Lime Cordial

Although cordials sometimes refer to sweet liqueurs, lime cordial is a nonalcoholic, sweet lime flavoring for beverages. You can mix lime cordial with sparkling water for a refreshing homemade soda. Lime cordial is also an ingredient in cocktails, including gimlets.
Homemade Lime Cordial

To make your own lime cordial, combine 2 parts sugar with 1 part water in a saucepan. Bring the mixture to a simmer to dissolve the sugar. Stir in 1 part fresh lime juice, along with the zest from the limes. Cool the mixture and refrigerate it overnight to develop the lime flavor. Strain the cordial through a sieve before using it.
