Items you will need
- Baking sheet
- Parchment paper
- 24 Ritz crackers
- Resealable plastic bag
- 1 egg
- 2 tbsp. mayonnaise
- 1 tbsp. Dijon mustard
- 1/2 tsp. garlic powder
- 1 tsp. lemon pepper
- 4 4-oz. skinless, boneless cod fillets
Bake cod with a buttery topping of Ritz crackers. Prepared this way, the cod will still be crunchy, but without the fat of deep frying it. Use an egg mixture to hold the crackers onto the fish and ensure that each cod fillet is evenly flavored with spices. If you cannot find Ritz brand crackers, use any round, buttery cracker or saltines.
Preheat the oven to 400 degrees Fahrenheit.
Line a baking sheet with parchment paper.
Put the crackers into the plastic bag and seal the bag. Use your hands to break up the crackers in the bag into coarse, pea-sized crumbs.
Transfer the crushed crackers to a plate.
Beat together the egg, mayonnaise, mustard, garlic powder and lemon pepper in a shallow bowl.
Dip the cod fillets in the egg mixture to coat both sides.
Press both sides of the fish fillets into the crushed Ritz crackers and transfer the cod to the parchment paper-lined baking sheet.
Cover the tops of the fish with any leftover crackers.
Bake the cod for 10 to 15 minutes or until the fish flakes with a fork and the interior has turned completely opaque.
Replace the cod fillets with any white fish fillets in this recipe.
