Zucchini are a delicious addition to almost any meal. They are great in stir-fry, quick breads and casseroles. For a nutritious side dish that will please almost anyone, roast zucchini in the oven. This is a quick and simple way to add vegetables to you meal. Zucchini is very low in calories and has no fat. It is also a good source of vitamin C and K.
Place your oven rack on the top slot in your oven.
Preheat the oven to 450 degrees Fahrenheit.
Wash 1 lb. zucchini thoroughly. Place the zucchini on the cutting board and slice it lengthwise twice.
Place the zucchini skin down on the cookie sheet.
Use a brush to lightly coat the zucchini with olive oil.
Place the cookie sheet in the oven once it is heated.
After five minutes, check the zucchini to see if it is beginning to brown. If not, continue to cook it for an additional two to three minutes.
Remove the zucchini from the oven when it begins to brown.
Add salt and peper to taste and serve.
For added flavor add other herbs and seasoning like thyme, garlic, and rosemary.
