When translated to English, pollo asado means roasted chicken. As a technique, asado is an open-fire style of cooking meat that uses hardwoods and seasonings for flavor. The dish pollo asado mirrors traditional Cuban roasted chicken. When you prepare pollo asado, chicken pieces are marinated in a blend of citrus juices, garlic and herbs, and cooked on a hot grill or frying pan. The result is a flavorful meal with distinct Latin-American flavor.
Combine the lemon, lime and orange juice in a bowl with a small whisk.
Add garlic, pepper, cilantro, paprika, cumin, cilantro and soy sauce to the mixture and whisk until blended.
Line the bottom of a baking dish with orange rinds and set the chicken breasts down on top of them.
Gently pour the marinade over the chicken.
Cover the baking dish with plastic wrap and refrigerate the meat for at least two hours.
