How to Make a Venison Rub

Deer meat, which is otherwise known as venison, is an excellent source of protein and is relatively low in fat and calories. Some people claim that they don't like the taste of venison because is too strong or "gamy." One way to add a pleasant flavor to venison steaks while tenderizing at the same time is to use a rub. A venison rub is a combination of herbs and spices that are applied to the raw deer meat prior to cooking.

Mix the garlic, horseradish, onion powder, paprika, cayenne pepper, salt and pepper in a small mixing bowl.

Pour the olive oil into a shallow dish.

Dip the venison steaks into the oil to add a thin coating to the meat. This will help the spices to stick.

Rub the dry spice mixture onto the venison, making sure that you coat all surfaces of the meat.

Place the venison in a dish. Cover the dish and place it in the refrigerator for approximately 2 hours.

Remove the venison and cook it according to your recipe.
