When you think of steaks, you probably think of summer heat, iced beverages and the sizzle of an outdoor grill. However, you can enjoy delicious, juicy steak even when your grill is out of commission for the winter. The next time you’re craving sirloin, try marinated, broiled steak. You can make these cuts indoors and flavor them any way you like.
Place up to three ½-inch-thick sirloin steaks into a plastic freezer bag. Pour in enough marinade to cover the steaks completely. Purchase a premixed marinade, or use your favorite recipe.
Place the marinating steaks in the refrigerator overnight. The longer they marinade, the juicier and more tender the meat will become.
Preheat your oven to about 350 degrees Fahrenheit. Place a cast-iron skillet in the oven on the top rack. As the oven heats, the skillet will too. This provides a hot, safe surface for cooking your steaks.
Turn the oven temperature up to about 500 degrees Fahrenheit, or simply turn the knob to the “broil” setting. Remove the heated skillet from the oven with a hot pad.
Pull the steaks carefully out of the marinade and place them in the skillet. They will begin to sizzle.
Place the skillet back into the oven and let them bake for about 7 minutes. Open the oven, turn the steaks over and let them bake for another 7 minutes.
Remove the steaks from the oven and the skillet. Place them on a ceramic plate. Allow them to rest for about 10 minutes so the steak will be juicy and tender.
