Think you can’t enjoy queso because you’re a vegan? Think again. We’ve whipped up a dairy-free queso that tastes like the real thing — soy and fake cheese not included. This vegetable-based dip is so tasty, even non-vegans will enjoy it.
You’ll make the queso by combining roasted eggplant with steamed cauliflower in a food processor. Eggplants are an excellent source of dietary fiber, which boosts digestion and protects against Type 2 diabetes. And cauliflower contains sulforaphane, which combats cancer and improves blood pressure.
Add cashew milk for creaminess, along with a handful of spices (think: turmeric, cumin, cayenne pepper and smoked paprika) for a hint of heat. You’ll also toss in nutritional yeast for richness and liquid aminos for a delectable, umami flavor.
Blend until smooth and serve topped with Rotel. You can enjoy it with chips or your favorite vegetables of choice. This dip is so deliciously creamy, you won’t even notice it’s dairy-free (we promise!).
