Dry milk, also called powdered milk, is handy to keep in the kitchen because of its versatility. When you run out of any milk-based ingredient, you can almost always substitute dry milk for what you need. Evaporated milk is something that many recipes call for, but you might not always have it on hand. If you run out of evaporated milk, you can use dry milk to make your own.
Pour 1 1/3 cup of water into a container, such as a bowl or jar. Empty glass milk bottles also work well for storing evaporated milk in your refrigerator.
Measure out 1 cup of dry milk, and combine with the water. Shake or stir mixture until thoroughly combined.
Add 2 tbsp. of vegetable oil to milk and shake again. The oil will separate from the milk as it stands, so you need to shake the mixture up just before using for even distribution.

- To make skim evaporated milk, simply leave out the vegetable oil.
