Many older recipes call for pork chops to be floured and pan fried at the start of the recipe, but today's pork chops are leaner and don't necessarily need this step. If you want to reduce your family's intake of carbohydrates or if you need to limit gluten, there are many ways to cook pork chops without flour. Many of the older recipes you already use can be adapted by simply omitting the flour coating. Your family will enjoy your updated, fresher-tasting versions of these dishes.
Broiled Pork Chops
Season the chops with salt and pepper or dry dressing and seasoning mix as desired, then place them on the top shelf under a preheated broiler. Leave the oven door cracked and the hood fan on. Broil the chops for 3 to 5 minutes on each side until done. The actual cooking time depends on the thickness of the chops and the distance from the broiler flame or heating element.
Grilled Pork Chops
Pork chops are delicious when grilled and there is no need for a flour coating. Use your outdoor grill, electric grill appliance or cook them in a preheated grill pan. All they need is a sprinkling of flavorful dry dressing and seasoning mix. Throw a few peppers and onions on the grill alongside the chops and a pineapple ring or a peach half to round out the meal.
Pork Chops and Sauerkraut
Brown pork chops on both sides in a small amount of olive oil over medium-high heat. Remove them from the heat and place them on top of a casserole dish containing layers of sauerkraut, sliced potatoes and onions. Mix a can of cream of mushroom or cream of celery soup with the sauerkraut juice and pour it over the chops. Bake in the oven for 1 hour at 350 F or until the chops and potatoes are cooked through.
Pork Chops in Casseroles
Place pork chops, either uncooked or browned, on top of the casserole ingredients and cover with sauce. Try raw pork chops on a bed of uncooked rice and top with a can of cream of mushroom soup mixed with enough water to rehydrate the rice, approximately 1 1/2 cups of water per cup of rice. Stir in a packet of dry salad dressing and dip mix to add zip. You can also make this recipe with stuffing mix instead of rice or substitute a flavorful gravy for the soup.
Cooking Temperatures for Pork Chops
The USDA recommends cooking pork chops to an internal temperature of at least 145 F and allowing them to rest for 3 minutes before serving. At 145 F pork chops are medium rare and still a little pink inside, but safe to eat. Take the temperature at the center of the chop without letting the thermometer tip touch the bone.
