As the culinary resource What's Cooking America explains, she crab soup is made from the meat of the blue crab. This soup shares similarities with chowder and bisque. It can be made of milk or heavy cream or with crab or fish stock — the latter options significantly lower the calorie count.

Charleston Food Tours explains that she crab soup is famous on the coasts of both Georgia and South Carolina, dating back to the early 1900s. Settlers in the area who arrived from Scotland created a similar dish 200 years earlier and brought a blue crab and rice recipe with them.

It was President Taft who helped create she crab soup as it is today when he asked Charleston Mayor Rhett's butler for a "fancier version" of the Scottish soup -- the butler added crab roe, making a creamier version and creating what is now know as she crab soup today.
