Garlic has a bit of a bad reputation for causing bad breath and for its pungent odor. But garlic also has another, sweeter side that can be brought out by roasting the individual cloves. Roasting garlic creates a rich, buttery taste that can be used to add flavor and dimension to many of your favorite recipes. The clove softens during roasting and can be used as a spread on potatoes, meat dishes and even fresh bread.
Preheat the oven to 350 degrees Fahrenheit.
Arrange the peeled cloves in a single layer in an oven-safe baking dish.
Drizzle the cloves with a small amount of olive oil.
Bake for 35 to 40 minutes, or until the cloves are soft.
Use the garlic cloves immediately to add flavor to your desired recipe.
Add salt, pepper, Italian seasoning and other herbs and spices for a more intense flavor. Sprinkle the desired herb or spice over the top of the cloves before adding the oil. Dried herbs, such as rosemary and basil, tend to work better than fresh herbs.
