Cooking beef heart in a crock pot is one of the most common ways to prepare a meal overnight. Beef heart is a tasty and protein-rich dish you can enjoy with your family or guests as a main course. A delicious and nutritive recipe, stuffed beef heart can be served with potatoes and vegetables on any occasion.
Wash the beef heart thoroughly and remove the fat and arteries. Soak it for 30 to 40 minutes in cold, salted water. Drain the heart and pat dry with a paper towel. Brush the outside of the beef heart with 2 tbsp. of vegetable oil. Sprinkle salt and pepper to taste on both the inside and outside of the heart and set aside for later use.
Place the sage, bread crumbs, parsley, sausages and onion in a bowl and mix them together. Take the heart and fill it with this dressing. Close the heart with skewers and dredge it with the flour. Heat the remaining vegetable oil in a frying pan over medium heat and add the stuffed beef heart. Fry it for seven minutes on each side, or until it browns well. Remove it from the pan and place it in a crock pot.
Add the flour left after dredging to the frying pan. Add the water and beef base and mix well. Pour this gravy over the beef heart in the crock pot. Set the crock pot temperature to "High" and cook for one hour. Change the temperature to "Low" and cook for another eight to nine hours. Serve while it is still hot.
