Are you a fan of Thai food? You’ll love our twist on Thai fried rice. Instead of using standard white Jasmine rice, we’re subbing in riced cauliflower for lower-calorie feasting.
And if you have guests — or Instagram followers — you want to impress, serve the entire dish in a hollowed-out pineapple to really amp up its appeal. While the entrée may look fancy, it actually takes only 15 minutes to whip up.
Our low-carb fried “rice” features scrambled eggs sauteed with chopped red bell peppers, pineapples and cashews. Tart and sweet, pineapples are an excellent source of immune-boosting vitamin C. And because they’re rich in phytochemicals and carotenoids, red bell peppers provide antioxidant and anti-inflammatory benefits.
Once you’ve tossed everything together with your riced cauliflower, mix in tamari and Sriracha for a savory kick. Feel free to adjust the spice level to your preference.
And if you’re a meat eater, this dish tastes great with any protein of choice, such as grilled chicken, steak or shrimp.
