hi I'm Vicky chelf and I'm the author of Vicky's vegan kitchen and I'm going to show you how to make baked potatoes that are not so fattening and you know potatoes actually are not real fattening to begin with it's the butter and all of the fat that we put on them butter sour cream and things like that that are actually a lot more fattening than the potatoes themselves a potato has about the same amount of calories as an Apple so you don't have to worry too much about the potato so when you bake a potato you can I think the main thing you don't want it to be dry so there are different things you can do to make it seem less dry and just more tasty like let's say you just sauté onions uh sauté onions with or caramelized onions that would be really good or sauteed onions with garlic um sauteed onions with garlic bell pepper how about some steam Ste spinach mix it up in the potato you can just sort of stuff the potato with some steamed spinach or how about maybe broccoli and cauliflower steamed and you can scoop out part of the potato and put some broccoli and cauliflower in it top it with a little drizzle of olive oil you know that that would be delicious um another thing you could take some yogurt I use soy yogurt but you could make sure it's unsweetened of course and mix it with uh a clove of garlic and a little bit of Mari soy sauce um put it on your potato rather than sour cream um a lot of different things you can do to make baked potatoes a food that you can enjoy without guilt
