Vidalia onions have a sweet, mild taste compared to most other onions. They are quick and easy to cook in the microwave oven, and you can find numerous recipes for ways to prepare them. Vidalia onions are a good source of calcium and dietary fiber, while containing no fat, cholesterol or sodium. Considering all this, microwaved Vidalia onions are a good choice for an unexpected, no-hassle side dish. For the best flavor, buy Vidalia onions from late April through mid-November. Choose those with pale golden-brown exteriors, rounded bottoms and fairly flat tops.
Peel two medium Vidalia onions. Cut off the top and bottom tips with a sharp, nonserrated knife. Scoop out a hole in the top of each onion about 1 inch deep.
Place 1 tsp. of butter and one beef bouillon cube into the holes in the top of the Vidalia onions. Add any other seasonings to taste. Try a dash of paprika, ground red pepper or dried oregano.
Seal the onions in a microwave-safe dish and lid. Microwave on high for five to eight minutes. Keep in mind that microwave strength and onion size vary, so cooking time does too. Check whether the onions are tender, and microwave them for another minute or two as needed.
Carefully remove the Vidalia onions with a spatula and let them cool for a few minutes before eating them.
