0:12 going to show you a traditional beef

0:14 stew recipe today we're going to start

0:16 with a basic mwah which is our onions

0:18 carrots and celery we're going to saute

0:20 those to get them brown and nice and

0:22 flavorful by caramelizing them so I'm

0:24 just going to do a rough chop on my

0:25 celery about a half inch thick works

0:29 well the beef stew is kind of rustic so

0:32 I don't want it to uniform then I'm

0:34 going to take some of my onion same

0:36 thing about a half inch thick that looks

0:39 nice ok I'm going to do my baby carrots

0:41 whole but I'm going to saute all this

0:43 first in my pan to get it nice and

0:44 caramelized okay we're going to add in a

0:47 little olive oil now that I pan is hot

0:49 and we'll add in our onions and our

0:52 celery that's going to come nice and

0:53 brown I'm going to add just a little bit

0:56 of salt and pepper I like to use a low

0:58 sodium salt like oceans flavors

1:00 something has less sodium a little bit

1:02 healthier for you as you can see with

1:03 already starting to caramelize right

1:05 here on the bottom that's what we're

1:07 looking for we're going to add in the

1:08 carrots we're going to let that Brown

1:11 for maybe three minutes just to get

1:14 those onions nice and opaque or

1:16 translucent look at that starting to

1:19 look really good well that Browns I'm

1:21 going to dice up some garlic to add into

1:24 that we've got about four cloves of

1:26 garlic just going to smash them down and

1:28 then dice them up again I want a rough

1:30 cut not too small in uniform you notice

1:33 that they move my knife around I'm not

1:34 keeping it straight so that there are

1:37 all different sized cuts different

1:39 shapes then I'm going to go ahead and

1:40 add that in going to give it a stir look

1:43 at that that's exactly what we want to

1:45 happen see all those brown bits that's

1:47 called the font that's forming on the

1:49 bottom of the pan that's going to add

1:51 all kinds of flavor to our beef stew

1:53 okay next we're going to do our beef or

1:55 us to me so I've got about a pound a

1:59 pound and a half of stew meat right here

2:00 and you're going to chop it up in a

2:03 bite-sized pieces so that it's easy to

2:05 eat when you serve it and very important

2:08 that when you cut it you want to cut it

2:09 across the grain so the grains going

2:11 this way and I'm cutting it this way so

2:13 the meat is very tender when it cooks it

2:15 helps tenderize the meat okay I've got

2:18 about a pound a pound and a half ass to

2:19 meet here to that I'm going to add about

2:22 two tablespoons three tablespoons of

2:24 flour and maybe eighth or a half a

2:27 tablespoon salt and pepper I'm going to

2:29 mix that together to coat my meat evenly

2:32 that's going to give it a nice brown

2:33 texture when I add it into my pan add a

2:35 touch more oil keep them from sticking

2:37 then I'm going to add this right into

2:39 the center don't worry about that flower

2:42 because that extra flour is going to

2:44 help to thicken our beef stew now we're

2:48 going to brown that to get a nice brown

2:50 texture on our meat then we're going to

2:52 combine all this ingredients with our

2:54 seasoning into our slow cooker and get

2:56 our beef stew started as you can see our

2:59 meats get nice and brown and I'm going

3:00 to move it aside for a minute because i

3:02 want you to see the font for me that fun

3:04 right there is what we're going to

3:06 delays off the pan and that's going to

3:08 add all that rich flavor little browning

3:10 occurring on on meat that's what we

3:12 wanted for flavor going to add in about

3:15 a half a cup quarter of a cup of our

3:16 beef stock and if you look closely

3:18 you'll notice the brown fun and starting

3:21 to deglaze off the pin it's going to

3:23 release from the pan from the scheme and

3:25 it's going to form sort of a gravy right

3:27 there that's going to be the basis of

3:29 our beef stew right there now we're

3:32 going to add this into our stock pot

3:33 we're going to add two tablespoons of

3:36 oil then our diced potato I've got a

3:38 potato diced up but one inch or half

3:41 inch cubes then I'm going to add in some

3:43 seasonings now I'm going to keep my

3:45 rosemary whole because I want to be able

3:47 to pull it out later and my time as well

3:49 that way it'll add the seasoning but I

3:51 won't have the herbs of the sticks in

3:54 there going to add in a couple of bay

3:56 leaves and then lastly about a teaspoon

3:59 of thyme our beef stock of four cups

4:02 that's already looking good in there and

4:04 to that we're going to add our beef and

4:07 our vegetables and you can see all that

4:10 brown gravy kind of formed in there

4:13 that's going to add all that flavor we

4:14 were talking about all that brown flavor

4:17 that's in there you can see our

4:18 caramelized onions right in here it's

4:20 all that sweetness and the sugar that

4:22 came out of the onions that's going to

4:23 add that deep rich onion flavor which

4:27 won't be

4:27 a CD at all to be actually sweet that's

4:30 what slow-cooking does it brings out all

4:32 those sugars it also helps tenderize the

4:35 meat because by cooking at 160 degrees

4:38 180 degrees the bonds and the meat fiber

4:42 actually turned to gelatin and get soft

4:44 that's where you get that fork tender

4:48 beef stew now we're going to cook that

4:50 covered for four to six hours feel free

4:53 to do it before you go to work it'll be

4:55 ready when you come home and you're

4:56 going to have yourself a tasty beef stew

4:59 let's take a look at our slow-cooked

5:01 beef stew I think it's cooked up perfect

5:04 nice and tender this is going to be nice

5:06 and fork tender it's a hearty meal one

5:10 of those nice cold days I'm going to

5:12 finish it with a sprig of fresh parsley

5:16 there you have a beautiful dish tender
