When I was a child my Grandma grew and canned her own tomatoes and her mother did the same. When my kids were little I also grew tomatoes and canned them. Here is one of the easy recipes that has been passed down through the years to make a quick macaroni & tomato lunch.
Cook macaroni per directions on the package. Use whole grain macaroni if you want more fiber and nutrition. Drain the macaroni.
Open a jar or can of whole tomatoes. You can heat the tomatoes first in a separate pot or add them to the macaroni at room temperature.
Put cooked macaroni in a bowl because the tomatoes will be juicy. Spoon on tomatoes as little or as much as you like.
Season to taste. Most canned tomatoes have added salt so only pepper is needed unless you want to be more creative in your recipe.
Serve alone or with other lunch foods. It is especially nice on a hot summer afternoon served with a side of cottage cheese. If you eat meat a plain hamburger patty goes well with it too.

- When using your own homegrown and preserved tomatoes you will know exactly what went into the jar and that there are no extra additives.
- Be careful when cooking with any home or purchased canned foods. If the tops or lids are bulging, don't use it and throw it away.
