How to Roast Carrots. If you want to make a new quick and easy side dish for your family, give roasting carrots a shot. As they roast, their natural sugars release, making them sweet as can be. You might even think they're for dessert. Here's a great recipe.

Pre-heat your oven to 400 degrees.

Peel your carrots using a vegetable peeler. If you choose to use baby carrots (which will be sweeter in taste) you may skip this step.

Cut the carrots into quarters. This is not an exact science. Big, chunky and rustic is what you're looking for here. Also, if you are using baby carrots, you can skip this step.

Spray baking sheet with non-stick spray.

Arrange carrots in a single layer on the baking sheet.

Drizzle olive oil over the carrots and sprinkle a few pinches of salt and dashes of dried thyme over them.

Place in the oven for 45 minutes or until the texture of the carrots is soft.
