Items you will need
- 1 lb container of sour cream
- 1 onion
- 1 green pepper
- 2 cans cream of mushroom soup
- 1 lb block of Swiss cheese
- 1 pkg of extra wide egg noodles
- 2 tbsp of butter
Ham casserole is a great way to use up leftover ham, along with using it for sandwiches, scrambled eggs, omelets, etc. This is tasty ham casserole recipe is simple and easy to make. Variations would include adding vegetables or potatoes.
First, cook the entire package of egg noodles as directed, drain and set aside. Then dice up your green pepper and onion. In a small frying pan, place the butter and the green pepper and onion and saute it on low heat. Meanwhile, in a bowl, mix up the entire container of sour cream and the 2 cans of cream of mushroom soup. Add the pepper/onion mixture to the bowl of soup/sour cream and it becomes your sauce. Set it aside.
Dice your ham. How much ham you want in the casserole is up to you. A starting point could be to use about four large handfuls. Set it on a plate and set aside. Grate your block of Swiss cheese and set aside.
Spray your casserole dish with nonstick spray. Using one-half of the egg noodles, layer the bottom of the dish. Next, sprinkle one-half of the cheese on top of the noodles; sprinkle one-half of the ham on top of the cheese; and spread one-half of the sauce mix on top of the ham. Repeat the layers a second time using the last half of the noodles, cheese, and ham and sauce.
Preheat oven to 375. Place ham casserole in the oven and bake until heated through. Stir occasionally.
You may also use 3/4 of a small canned ham and dice it up accordingly. For reheating, add a splash of milk to the ham casserole and either microwave or heat in a pan on the stove top.
