Lack of moisture during storage leads to limp celery. Celery requires a constant supply of moisture to keep the cells in the stalks filled and crisp. Immediate refrigeration helps prevent the celery from becoming dehydrated and limp, but the stalks still require moisture during refrigeration to replenish any that is lost during storage. Packaging the celery correctly before you store it ensures that the stalks will receive the necessary moisture to retain their crispness.
Rinse the celery under cool water. Shake the excess moisture from the stalks.
Layer two to three paper towels together. Dampen the paper towels until they are moist but not soaking wet.
Wrap the celery stalks tightly in the moistened paper towels. The moisture in the towels helps keep the celery crisp during storage.
Place the wrapped celery in a plastic storage bag. Store the wrapped celery in the vegetable crisper drawer in the refrigerator.
Check the celery daily and remoisten the towels if they begin to dry. The celery will retain its crispness for up to one week.
You can also store cut celery in a shallow tray of water for up to three days to maintain crispness.
