I know a lot of people who say they like to eat lamb but never make it at home. Why? Lamb doesn't taste good unless it is very tender, flavorfull, and juicy. There are a couple of simple keys to cooking lamb that will give you these results everytime. If you follow these simple steps it doesn't matter what cut of lamb you prefer it will turn out delicous.
The first thing to remember is you must cook lamb in a generous amount of flavorfull concentrated liquad, and not just water. I use canned soup my favorite is a potato soup, but you could use any cream soup IE: cream of chicken, cream of broccoli, cream of mushroom ect.... would be very good. You want it to be a very thick chunky soup.
Put you lamb into either a big soup pot on the stove, a casserole dish in the oven, or a slow cooker. This is important for the next step then cover your lamb with the soup (number of cans depends on how much meat you are cooking) , then add some water you want to use 1 cup of water per can of soup. The key is to cover the meet by at least 2-3 inches with liquid if possible. Then you can add veggies IE: potatoes, asparugus, artichokes, and other spices you like IE: black pepper, rosemary, oregano, garlic.
Now the second key to success is long and slow cooking. Lamb tastes best when cooked for a very long time at a very low heat. You will get the most favorable and tender lamb ever this way. For stove top cooking bring to a boil, turn down to low and simmer covered for 4-6 hours but watch your liquid level add water if it gets low. For oven cooking cover dish with lid or foil cook on 275-300 degrees for 4-6 hours check at 3 hours for liquid level and tenderness. For slow cooker start on high until hot and bubbly then low for 4-6 hours again watch the liquid level.
When this dish is done you will have lamb that falls apart with a fork, it will be so flavorfull, and juicy. You can serve it with pasta, rice or just a crusty bread.
