The nutty flavor of roasted peanuts complements both sweet and savory dishes. Creamed peanuts are used as sauces or fillings, in baked goods, or in old-fashioned peanut butter on a slice of bread. You can quickly cream whole peanuts using nothing more than a food processor or blender. Creamed peanuts only require two ingredients, which allows the real flavor of the peanuts to shine, although you can add seasonings and sweeteners to further improve the flavor, if desired.
Shell, if necessary, 1 cup of peanuts and place them into the bowl of a blender or food processor. Use salted peanuts if you want salt in the final cream, or use unsalted if you prefer to season the cream after it's made.
Process the peanuts for 1 to 2 minutes, or until they are finely chopped and clumping up. Turn off the processor and scrape the sides of the bowl with a spatula; process a second time so all the peanuts are chopped evenly.
Add 1 tablespoon of peanut, safflower or canola oil to the bowl and blend for about 30 seconds, or until the oil is incorporated into the peanuts and the mixture develops a creamy consistency. Add additional oil as you continue to cream the peanuts to manage the final consistency to the thickness desired.
Add desired seasonings to the bowl, such as salt, and honey or other sweeteners. Blend for 30 seconds, or until the seasonings are evenly mixed into the cream.
Store the peanut butter in an airtight container or jar in the refrigerator for up to two weeks.
The oil in creamed peanuts separates during storage. Stir the oil back in before using the peanut mixture.
