Meat and potatoes are the foundation of satisfying, nutritious meals. Those meals can also be easy to prepare and cook. Casseroles of all types use just meat and potatoes together, or in combination with other vegetables. Slow cookers, popular for their everything-in-one-pot method of cooking, are an ideal way to combine meat and potatoes for an easy meal. Other meat and potato dishes are best baked in the oven for low-fat, convenient meal preparation and simplified cleanup.
Beef and Potatoes
Meatloaf is an all-time favorite with people of all ages, and it's easy to prepare. Add to the menu peeled, quartered white potatoes or unpeeled, well-scrubbed new red potatoes baked on a cookie sheet with a dab of butter. Round out the meal with carrot chunks baked on the same cookie sheet. Another favorite is beef stew made in a slow cooker with cubed beef, diced white potatoes, carrots and peas. Slice raw veggies for the stew, or use a bag of frozen mixed vegetables or peas and carrots.
Pork and Potatoes
Cover pork chops with prepared barbecue sauce and bake them in a roasting pan. Scrub white potatoes and cut them into wedges to make oven fries. Add them to a little oil on a cookie sheet and sprinkle them with spicy ranch dressing mix. For another dinner delight, bake a pork loin roast in a roasting pan. In a separate pan, layer sliced sweet potatoes with dabs of butter and sprinkles of cinnamon, and bake until the potatoes are soft.
Chicken and Potatoes
Make a casserole with skinless, boneless chicken breasts and quartered red potatoes. Add enough chicken broth to keep the meat from drying out. Season with garlic, salt and pepper, and bake in a greased casserole dish. If you like, add sliced carrots, celery, peas and pearl onions to your casserole. For a dinner of delicious chicken tenders, coat them with ranch dressing, then dip them in cracker meal and bake them on a greased cookie sheet. Scrub and bake white potatoes to accompany the chicken.
Ham and Potatoes
Cook and cube white potatoes, then combine them with pre-cooked ham cubes in a greased casserole dish. Add cheddar cheese, salt and pepper, sour cream, chopped onion or onion powder, and butter. Bake it until the cheese melts and the other ingredients are hot. To make scalloped potatoes and ham in a slow cooker, slice the potatoes thinly and use ham that's already cooked. Add butter, a little flour and milk to make a sauce, and season the dish with salt and pepper to taste.
