Lasagna pinoy, or Filipino lasagna, is a sweet and cheesy white sauce-based casserole dish commonly served for lunch or dinner. In contrast to the well-known Italian variety, lasagna pinoy uses diced hot dog within the meat mixture and large amounts of cheddar cheese. The type of cheddar cheese you select will affect the flavor of the lasagna pinoy, and sharp cheddar provides the strongest flavor. Approximately 1-1/2 hours is required to cook lasagna pinoy. This recipe yields about six to eight large servings or 10 to 12 small servings.
Preheat the oven to 350 degrees Fahrenheit.
Combine the olive oil, white onion and garlic in a large skillet. Place the skillet over medium-high heat and stir the onion and garlic for five minutes.
Add the ground beef and diced hot dog to the skillet. Continue stirring until the ground beef is browned.
Stir the bell pepper, mushrooms, celery, sugar and tomato sauce into the contents of the skillet. Reduce the heat to low and simmer the meat sauce for eight minutes. Remove the skillet from the heat and set it aside.
Place the butter into a saucepan and melt it over medium heat. Once melted, add the flour and stir until the two ingredients are blended thoroughly. Stir in the evaporated milk and 3 cups of the cheddar cheese. Continue stirring until the cheese has melted and remove the saucepan from the heat. Set the white sauce aside.
Arrange a single layer of cooked lasagna noodles in the bottom of a lasagna pan. Spread a thin layer of the meat sauce over the noodles, followed by a thin layer of white sauce. Repeat the layering of noodles, meat sauce and white sauce until all ingredients are used up.
Sprinkle the remaining cheddar cheese over the top of the lasagna. Place the lasagna into the oven and bake it for 45 minutes or until the cheese on top is golden brown and bubbly. Allow the lasagna pinoy to cool for five minutes before serving.
Refrigerate leftover lasagna pinoy immediately and consume it within 72 hours. To save time, you can use premade meat sauce and white sauce in this recipe. You can cut calories by selecting low-fat varieties of ingredients.
If you have a premade lasagna pinoy, bake it in the oven at 350 degrees Fahrenheit for 45 minutes or until the top is golden brown. If the premade lasagna is frozen, thaw it in the refrigerator before baking it.
