How to Make Vegetarian Sausage

by Jason Jensen

One of the hardest parts about being a vegetarian is giving up delicious breakfast foods, like sausage patties. Luckily, you can simulate just about any meat with textured vegetable protein (TVP). Textured vegetable protein is a soy product made from soy-flour. It is highly malleable and easily reconstituted to look and feel like beef, chicken or pork. With the right blend of seasonings, it's perfect for making vegetarian sausage.

Mix together the vegetable protein and spices in a large bowl until they are evenly mixed.

Pour 1 cup of boiling water over the mixture and let the mixture stand for five minutes, or until all the water absorbs into the mixture.

Add the eggs and the flour to the mixture and stir with a wooden spoon.

Roll and press the mixture into patties with your hands, similar to how you would make cookies. The mixture should yield approximately 12 patties.

Pour 1 tbsp. of vegetable oil into a frying pan set on medium heat.

Place the patties into the frying pan. Brown the patties on each side, turning them over with a spatula, then serve.
