Marinating pork ribs or pork loin adds tenderness and extra taste. A good marinade helps to break down the tough muscle fibers while infusing the meat with flavor. Acid of some kind, like that found in citrus juice, vinegar or wine is necessary for this process. Oil keeps the meat from cooking in the marinade, and spices add flavor. Whether you are marinating pork loin or pork ribs, a homemade pork marinade or one that comes pre-made from the store will work.
Rinse your pork in cool water and pat it dry with paper towels.
Sprinkle coarse salt and cracked pepper onto all sides of your pork and press it into the meat with the back of a spoon or your fingers. This draws moisture out of the meat that returns to it during cooking, which helps keep it from drying out.
Pour equal amounts of oil and vinegar, wine or citrus juice into a bowl. Add seasonings to taste and whisk them.
Place the pork loin or pork ribs into a plastic zipper bag large enough to easily contain them.
Add the marinade to the plastic zipper bag and massage the meat to make sure that the marinade coats all of it.
Squeeze the extra air out of the zipper bag, close it tightly and place it in the refrigerator.
Marinate the pork for at least 30 minutes or overnight. Turn the bag occasionally to keep the pork evenly coated with the marinade.
- Add minced garlic and chopped onion to your marinade for a heartier flavor.
- Never let your pork marinate on the counter overnight because this can allow bacteria to develop.
- Commercial marinades are often high in sodium, so make sure to read the food label before using them.
