Preparing a tasty teriyaki chicken meal is very easy and a healthy alternative for the family who likes chicken but is bored with the usual. Preparation takes very little time and does not require any obscure ingredients with only a few exceptions that you can have on hand for whenever the mood strikes you. Preparation will only take one pan and one bowl, so cleanup is as easy and fast as cooking the meal.
Rinse the chicken and pat dry.
Cut the chicken breasts into bite-sized pieces up to 1 inch in diameter.
Mix teriyaki sauce, water, orange juice concentrate and cornstarch in a medium-sized bowl.
Preheat a frying pan or wok over high heat. Add cooking oil.
Add the chicken pieces to the frying pan or wok and stir fry with large spoon and spatula for about four minutes or until the chicken is tender.
Push the chicken to the side of the pan.
Stir the sauce thoroughly and pour it into the center of the pan.
Cook the chicken pieces with the sauce, stirring continually until the sauce is thickened and bubbly.
Add pea pods and water chestnuts to the pan with the chicken and sauce.
Stir all the ingredients to coat them with sauce and cover for two minutes.
Serve with snow pea pods and water chestnuts over rice or chow mein noodles.
Use frozen pea pods if fresh pea pods are not available.
