Stir-frying is a flavor-packed, healthy and thrifty method of preparing meals. A well-balanced sauce is at the heart of any successful stir-fry and often includes the staple ingredients of garlic, ginger, soy sauce, sweetener and wine. An aromatic ginger garlic sauce works with virtually any protein and vegetable combination. It is versatile enough to stand alone or serve as a starting point for your culinary creativity. Adjust the saltiness or sweetness for your preference and consider adding a touch of red chili flakes for spice.
Combine soy sauce, wine, sugar and water in a bowl, and set aside.
Warm sesame oil in the saucepan over medium heat for 30 seconds.
Add garlic, ginger and green onion to the saucepan. Saute for 30 to 45 seconds, stirring occasionally. Ingredients should begin to get aromatic but not get brown.
Remove the saucepan from the heat and stir in the remaining ingredients.
- Note that ginger powder will offer a different flavor than fresh ginger; adjust amounts to suit the flavor.
- If you like a thicker sauce, stir 2 tsp. of cornstarch into the sauce before adding it to the stir-fry. Cook the sause long enough for the cornstarch to thicken.
- The sauce can also be used as a marinade for protein or as a dipping sauce for Chinese dumplings.
- Do not allow sesame oil to boil or smoke while cooking.
- Do not leave the saucepan on the heat unattended.
