Making this dish yourself and watching your portion size can help you keep the calories down to a reasonable number. A 1-cup serving of fettucine topped about 1/3 cup of an Alfredo sauce made with butter, Parmesan cheese and heavy cream has about 472 calories.
If you replace the butter and heavy cream in the typical Alfredo sauce with a mix of chicken broth, reduced-fat sour cream and low-fat milk and add peas, a small amount of prosciutto and Parmesan, you can have a larger serving, including about 1 1/2 cups of pasta, for 619 calories. Another option is to use evaporated skim milk, flour, low-fat milk and Parmesan cheese to make the sauce. A serving of this fettucine Alfedo, including 1/4 cup of the sauce, 1 1/2 cups of fettucine, 1/4 pound of chicken and 1/2 cup of sliced zucchini, contains about 660 calories.
