Flavorful, healthy and easy to prepare, tortilla-crusted tilapia fillets are a wonderful inspiration for an exciting, but quick, meal. The crispy tortilla coating is often infused with Southwestern-style flavors, making the fillets the perfect base for fish tacos. Simply toss the cooked fish in a tortilla, add shredded lettuce or cabbage, salsa and avocado, and you've got a complete meal. You can also serve the fish alongside Spanish-style rice or atop a Mexican-inspired salad.
Preheat your oven to 400 degrees Fahrenheit and place the oven rack on the center rung.
Line a baking sheet with aluminum foil. Lightly grease the aluminum foil with non-stick cooking spray or vegetable oil.
Arrange the tilapia fillets on the baking sheet, leaving about 3 to 4 inches of space between each piece.
Place the tilapia fillets in the oven and bake until the coating is browned and the fish flakes easily with a fork. Frozen fillets will require about 25 to 30 minutes, while thawed fillets should be cooked through in about 15 minutes. To ensure safety, cook the fish until a instant-read thermometer inserted into the thickest part of the fish reads 145 F. Cooking times can vary if you have a particularly large or small piece of fish, but most tilapia fillets weigh in at around 4 to 5 ounces and should cook fully in the specified time frame.
